Patricia Coffee Brewers (CBD)
No seats. A standing bar the width of a corridor. Patricia is the purist’s cafe — the focus is entirely on the coffee, the service is fast and knowledgeable, and the espresso is consistently among the best in the city. Order a magic (a double ristretto with a small amount of steamed milk). Come during the week to avoid the weekend crush.

Proud Mary (Collingwood)
The cafe that helped put Melbourne specialty coffee on the international map. Proud Mary roasts its own beans and runs a training academy — the staff know what they’re doing. The batch brew is always worth trying. The food menu is strong: the avo toast is actually worth ordering here.

Seven Seeds (Carlton)
The Carlton institution. Seven Seeds has been roasting excellent coffee longer than most of its competitors have existed. The warehouse space is comfortable, the food is good, and the espresso bar runs all day. Try the single origin pour-over if the rotating menu has something interesting.

Brother Baba Budan (CBD)
Named after the mythical figure who smuggled coffee seeds from Yemen to India, this tiny CBD laneway cafe has chairs hanging from the ceiling and some of the most interesting single origins in the city. It’s a sibling of Seven Seeds — same quality, different vibe.

ST. ALi (South Melbourne)
The South Melbourne institution that’s been doing specialty coffee since before the term existed in Australia. The courtyard is one of the best places in the city to drink a flat white. The food menu has range — breakfast through lunch, and it holds up. The espresso martini at night is worth knowing about.

Operator Coffee (Fitzroy)
The newer entry that’s quickly become a local favourite. Smaller than Seven Seeds, more focused than Proud Mary. Operator sources interesting beans and has the technique to back them up. The space is minimal and deliberately unhurried. Go on a weekday morning.

What to Order
If you want espresso: Ask for a single origin espresso or a magic (the Melbourne standard for a strong milk coffee — smaller than a flat white, more concentrated).
If you want filter: Batch brew is the barista’s choice — consistent and usually excellent. Pour-over if you have time and want to taste the bean clearly.
If you want milk coffee: Flat white, not a latte. The ratio is better. Most Melbourne cafes calibrate for it.
The Bottom Line
The gap between Melbourne’s best and worst cafes is enormous. Stick to the independent specialty roasters on this list and you won’t have a disappointing cup. Avoid anything with a plastic-wrapped muffin display.
